This comprehensive 8-hour course provides more in-depth knowledge of allergen management and explains in detail the characteristics of food allergy, food intolerance and coeliac disease.
Learners will gain a deeper understanding in how to reduce risks and manage allergens safely, from supplier to customer. Participants will also understand their responsibilities in order to comply with current food safety legislation.

This qualification is assessed by the learner completing 30 multiple choice questions set by Highfield. The minimum pass mark is 18 correct answers. Learners will achieve a distinction if they correctly answer 24 questions or more. The papers are sent to Highfield and are marked externally.
Candidates are also required to complete some pre-course work which will form part of the group discussion and will be agreed in advance. This can be about any subject relating to Allergens which the group may be working on. These topics may include Food Allergy Policy, Allergen Procedures, Standard Recipes and Allergen Matrix.
