Our innovative training includes delivering the Highfield Level 3 which can be delivered at your home or workplace. This is based on flexible modules that are supported throughout by our lead trainer. This is great for individuals who need to get on with this course.

About our training:


Highfield Level Award 3 in Food Allergen Management for Caterers

This 1-day Highfield recognised qualification is aimed at those responsible for the management of food safety including: managers, head chefs, supervisors and chef-managers, in the F&B industry. We can also deliver it online via split modules.

This comprehensive 8-hour course provides more in-depth knowledge of allergen management and explains in detail the characteristics of food allergy, food intolerance and coeliac disease.

Learners will gain a deeper understanding in how to reduce risks and manage allergens safely, from supplier to customer. Participants will also understand their responsibilities in order to comply with current food safety legislation.

Topic covered include:

  • The characteristics of food allergy, food intolerance and coeliac disease
  • Food allergy facts and figures
  • Common allergenic foods
  • Hidden allergens
  • Food allergy and the law
  • Different approaches to communicate food allergy information
  • Allergens and associated risks and control measures

This qualification is assessed by the learner completing 30 multiple choice questions set by Highfield. The minimum pass mark is 18 correct answers. Learners will achieve a distinction if they correctly answer 24 questions or more. The papers are sent to Highfield and are marked externally.

Candidates are also required to complete some pre-course work which will form part of the group discussion and will be agreed in advance. This can be about any subject relating to Allergens which the group may be working on. These topics may include Food Allergy Policy, Allergen Procedures, Standard Recipes and Allergen Matrix.

Online Option 1, Formal online invigilated assessment with industry recognised Highfield certificate.  This includes:

  • 15 videos containing full Highfield course content
  • online support via video link
  • Cost per person £120.00

Online Option 2, with Attendance certificate. This includes:

  • 15 videos containing full Highfield course content
  • Optional email support with timely response
  • You can also opt to have a formal Highfield assessment at a later stage
  • Cost £60.00 per person

Level 2 Allergen Training

This accredited course is ideal for anyone who works in the F&B industry and wants to improve their understanding of managing allergens in a busy kitchen and how to reduce the risk of cross-contamination in the working environment.

This 5-hour interactive course is ideal for raising allergen awareness for anyone who prepares, serves or sells food in any type of food business. Candidates will gain a deeper understanding of how to comply with current food safety legislation and how to improve allergen procedures in the workplace.

Topics covered include:

  • An introduction to food allergy, food intolerance and coeliac disease
  • Food allergy case studies
  • Common food allergies
  • Hidden allergens in food
  • Food Information Regulations 2014
  • Identifying key allergen risks from delivery through to service
  • Dealing with requests from customers with food allergies or food intolerance

The assessment method for this course is a 30-minute multiple-choice examination, consisting of 15 questions. To pass the candidate must correctly answer 9 or more questions. The papers are sent to Highfield and are marked externally.

The Purple Allergen Plan- Highfield Accredited

This 4-5-hour workshop includes background information on allergen management and interactive activity to increase practical awareness.

  • This can be adapted to suit the group. It is interactive and provides the knowledge and solutions required to implement better allergen management procedures in the workplace.
  • Participants will develop a deeper understanding of the risks. They will feel more confident in supporting customers with allergies which will encourage a positive allergen culture.
  • Key areas discussed will include: food allergen policy, training, allergen process and procedures, legal aspects and engagement within the team.
  • Participants will take part in a quiz at the end of the session to ensure that they understand all the key points. A certificate will be issued by Highfield Training following successful completion of the course.

How about a virtual Purple Allergen Plan?

  • This can be delivered in two session with up to a maximum of 20 candidates.
  • A larger group session will also proportionally reduce the cost per head. Prices available on request.

  • 1- 12 people– £50.00 each (Minimum 12 candidates, or minimum fee applies- £600)
  • 13-19 people- £47.00
  • 20-25- cost per person £37.50

  • 1-6 people- £300.00 per person (Minimum 6 candidates, or minimum fee applies: £1,800)
  • Groups of 7 or more- £275 per person
