We are all aware of the list of 14 MOST REPORTED allergens, but did you know you could be allergic to almost any food product or additive used in food manufacture?

It is well established that manufacturers and caterers owe a duty of care to their consumers to supply safe products. In order to discharge their duty satisfactorily they are required to take all reasonable steps to ensure the safety of their products.

Whilst the list of 14 main recognised allergens is widely publicised, this does not mean that people cannot be ALLERGIC to any other food groups or products, such as onions or tomatoes.

These products legally do not, and will not, have to be highlighted on labelling or menus, thus causing an issue for the sufferer.

If a customer has an allergy, regardless if it is one of the 14 MOST COMMON you, as a Food Business Operator, have a duty of care to provide as much information as you can on the dishes you manufacture or serve. This includes systems and processes relating to a meal’s preparation and service. Are you confident your staff can effectively converse with your customers and help keep them safe with the food you are producing?

Each request for Allergenic information MUST be treated as if it was one of the 14, because for that person it could be a matter of life or death.
